"Panda" Orange Chicken


Tried this "Panda Orange Chicken Copycat" recipe with a few adjustments.

It came out fantastic except the Cauliflower breadcrumbs were too dense. Next time I'll use cassava flour or a fine almond flour - the more granular, the more sauce is soaked up in a non-desirable way.



 

My modifications are below:


  • 1 lb boneless chicken breast or thigh chopped (I used 3 breasts)

  • 2 eggs whisked (I used 3 so I had left over for fried rice)

  • ½ cup protein powder (used cauliflower crumbs & almond flour – absorbs too much! Use cassava flour)

  • ½ teaspoon salt

  • ½ teaspoon pepper


Sauce:

  • ¾ cup sweetener (I used juice of two oranges and chicken stock instead)

  • ½ teaspoon molasses (used black honey)

  • ¼ cup rice vinegar

  • 3 tablespoon soy sauce (used coconut aminos)

  • ¼ teaspoon sesame oil

  • ¼ cup water (chicken stock)

  • ¼ teaspoon ground ginger

  • ½ teaspoon garlic powder

  • ½ teaspoon red pepper flakes

  • 1 teaspoon orange zest (used zest from 2 oranges for more flavor)

  • 1 teaspoon orange extract (optional) (did not use)

  • ¼ teaspoon xantham gum (avail at Whole Foods or Amazon)

  • ½ cup avocado oil for frying (I used coconut oil instead)



Rice: (whatever you like in fried rice, add!)

  • 1 bag cauliflower rice

  • 2 tablespoon soy sauce (coconut aminos)

  • 1 large egg (leftover whisked egg from dipping)

  • ½ teaspoon sesame oil

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • steamed broccoli crowns trimmed to small pieces

  • green onion for flavor

  • 1/4 c celery sauteed

  • 1/2 c bacon lardons


DIRECTIONS:

  1. Mix the protein powder (Almond flour absorbs too much, use Cassava flour) with the salt and pepper and set aside.

  2. Whisk eggs and set aside.

  3. Heat oil.

  4. Dip chicken pieces in eggs and then into protein powder (flour) and fry.

  5. Mix sauce in a bowl

  6. Once the chicken is cooked, set aside.

  7. Add sauce and cook to thicken

  8. Toss cooked chicken and enjoy!
