Halibut, Fresh Carrot Salad and Sweet Potato Tater Tots

Sometimes things for a meal just come together, which isn't always the case when trying out something new.




The halibut is lightly seasoned with salt, pepper, garlic powder and onion powder. Pan seared in coconut oil and finished with fresh squeezed lemon and butter.


The Sweet Potato Tater Tots (recipe link) tuned out pretty darn good. This time I did a hand mash instead of the food processor and they a bit too much texture for this dinner combo.


Roasted broccoli is very easy; break florettes down into bite-size pieces and put in ziplock bag in fridge overnight with salt and olive, roast at 400 degrees until done.


Carrot, Ginger and Cilantro Salad (recipe link) turned out to be our biggest surprise and will definitely e making a repeat performance.
