My best friend, Susan, developed and refined this delicious dressing/marinade and it's one of my go-to's for fish, chicken, salad and veggie dishes.
1/2 cup olive oil
3 TB rice vinegar
1 tsp. sesame oil
1 TB soy sauce (I like a bit more soy)
a slice of fresh ginger (about 1/4 inch thick) chopped
1 or 2 fresh garlic cloves
1/2 a fresh seedless orange
Mix all together in a food processor or by hand. This is a fantastic base that can be easily adjusted to fit a variety of flavor preferences; a bit of additional sesame oil and seed, little bit of lime in addition to in or place of the orange, extra ginger or garlic for more "snap", chopped fresh cilantro...
